Welcome to Cake Decorating Essentials. This letter will give you the basic information about the course as well as resources for ensuring your success in online education. Please read it carefully.

Let me start by telling you about me. I have a Bachelor's Degree in Media Management, Communications from Cal State University, Northridge and an Associate of Culinary Arts Degree from Le Cordon Bleu, Pasadena. While attending college and culinary school, I had a full-time job as a corporate mortgage trainer for 9 years. On the weekends, I held down back of the house jobs in various restaurants around Los Angeles. In 2008, I competed in an International Culinary Competition hosted by San Pellegrino and I won the overall competition and was named "San Pellegrino's Almost Famous Chef" for 2008. For the next year, I had the opportunity to tour the U.S. as San Pellegrino's Resident Chef, attending the James Beard Awards and other prestigious food events.

After graduating culinary school, I left my cubicle corporate job and dove into the industry head-first. I have now worked in the restaurant industry for 23 years, opening Bouchon in Beverly Hills as part of the opening pastry team, as Pastry Chefs at La Grande Orange Café, BoHo in Hollywood, Max Restaurant in Encino, Maximiliano in Highland Park, and consulting for Abby's Millstone Baking Company in Agoura, to name a few. I now enjoy teaching for the last 5 1/2 years at COC, and I also teach at ICE (Institute of Culinary Education) in Pasadena, as well as writing curriculum for CASA (The Chef Apprentice School of the Arts) in Los Angeles. I live in Canyon Country with my husband, 2 children and senior Jack Russell Terrier.

Course Description

This course will focus on practical instruction and skill in decorating cakes for the professional bake shop kitchen.  Students will present a variety of preparation techniques that emphasize the fundamentals of the American and European styles of cake decoration. Commercial culinary practices that will be included are, knowledge of equipment, procedures of cake production, coloring techniques, cake construction, borders, and icings.

What to Expect in this Course

This course is completely online for the next 5 weeks which runs July 14 to August 13, 2020. The course will be conducted in Canvas and everything you need for your success will be found there. Once the course starts you will be able to login at cv.canyons.edu . Follow the login instructions at the bottom of the screen to log in. Here, you can also access Canvas user guides with helpful tips for navigating and using Canvas. This is a fully online class and there will be no campus visits for class.

The book that we will be using for this course is: Professional Cake Decorating, (2nd Edition), Pearson Publishing, By Toba M. Garrett.

The COC bookstore is closed for walk-in visits however, if you would like to purchase a hard copy, the bookstore is offering free shipping. The book is also available in new and used copies on Amazon. Please purchase the book early enough, as reading and assignments will be assigned from this text on Day 1.

Other Relevant Course Information

This online course will be much like a face-to-face course, it takes a significant time commitment from you. I expect you to spend at least 10 hours per week working on the material. While there is a significant amount of reading, I have worked to make it all enjoyable. It is for this reason, I say the course will take at least 10 hours per week. You will sometimes be working individually, as this is an advanced course. You will have weekly assignments, either 1 or 2 cakes decorated each week, online lectures and online quizzes and tests. You are responsible for the material and will be tested on your understanding of them. This course is designed to include collaborative learning. Please do not wait until the last minute to complete your work. The unit module is available at the beginning of the week and you should start immediately. Education code requires faculty to drop no-show students. In this online class we don't meet in-person, therefore failure to participate in the online Zoom classroom lectures in the first week will result in your being dropped from the course.
